Have you ever received a bottle of wine and opened it to realize it really isn't to your taste? Well this is for you!
Medieval people often used spices and sugar in wine. Their wine was quite different from ours, not as aged and not of course they didn't have climate control. They tended to drink things young, and often quite acidic. A favorite way to enjoy wine back then was to pour a good measure into a vessel, and add a fair amount of sugar or honey to it, then add spices! After a few hours, they would decant the wine from the spices and drink it - and it was wonderful!
This works the same way - if you have an inexpensive bottle you bought yourself, or received a bottle as a gift that isn't to your taste, don't throw it away! Pour it into a jar, and add some of this mix along with some sugar or honey and let it sit for 5 or 6 hours, shaking occasionally. After 6 hours, decant it into another container and enjoy! You'll be amazed at how different it tastes! It becomes almost like brandy, or liqueur...
